The 6.2 LS motor was not available until 2007, so if these are original motors, they are 377 small blocks.

I really wonder how these would be with some 500-600 HP all aluminum LS motors in them. It would have to give them much better balance.

I can give you a bit of insight based in my setup. I'm one of the few that have a 29 with twin 350 mags. It's a great setup. Gets on plane very quick and there is actually room to do maintenance. I know most of the 32s had big blocks and sat very heavy in the rear causing some transom leaks. I would think twin 6.2s would be much lighter and sit up a bit in the rear. It's a trade off for me in the long run. Single big block 29s run 70-74mph stock. Twin small block 29s run 67-70mph. For me the long run life of twin small blocks, being able to repair both engines or maintenance for the price of one "nothing broke but it's time for a 525 top end job", ability to back in to a dock with the control of twins is all good for me. Even if my boat did 78 there are plant of boats on my lake that will still smoke my a** at 100+. So overall I think the 32 with twin 6.2s is a real nice package and has its advantages if your ok not having a 80+ mph big block boat.

My 32 Fever is a 2005 and has 6.2 Mercury Racing Scorpion 377's. They are 377hp, forged roller internals but not LS engines. That boat could also have 6.2 Mercury engines that are not forged internals and rated at 320hp. My water test sheet shows 76mph but I've never seen that at 2000ft.
