i would leave the outers and shortin the middle one, and possibily remove the middle skeg.

what would happen if i removed the skeg in the middle? would i still get control from the other two drives? would it loose much drag by doing so?

when imco did the 3engines in the eliminator they removed it. worked for them . you will have plenty of control with the outer drives,
