I'll throw my 2 cents in:
Advantage makes a very nice 30' that will run upper 70s, low 80s with twin 496s. It is by far the roomiest 30' boat you can buy. My 27 has a lot more cockpit/cabin room than a lot of 29s and 30s that I've been in. Other good possibilities are Lavey as mentioned and Shockwave also builds a very big 29.

Laveys are very nice. Hallet is also suppose to be real good.

See discussion around impellers in the ilmor 710 forum.

You wouldn't want to get a Ilmor with a blown head gasket or heaven forbid a warped head. Then again could cut the price of this particular boat in half.

Yeah that boats just awesome, a little impractical- but epic.

I like Advantage boats.

I had an Advantage 21Ft jet boat before I bought my Sebring back when Harry Christensen(I think that was his name) was around and I liked it. Back then they were down in Orange County Ca. They are worth checking out for sure. I only had a few issues in 5 years and they stood behind their product really well

Hallett makes a REAL nice rig as well. Another company thats been around for 50 or so years.

Its worth mentioning that the Laveycraft 2750 is 2 inches longer than the Hallet "290" <28.8 vs 28.6>

Dont know Shockwave that well.

We have a 2007 28 heat for 69,000 ,and this boat is like new inside and out. With tons of upgrades!

Wow, just a few days too late, you just missed the Hallett of all time. A contractor just gave one back and it sold in one day for an unbelievable price. But there are a couple of 29/33's over there with twins, give them a call; 626 969 8844 and ask for Nick or Jerry. Also try GT Performance in Upland, 909 982 8391 ask for Gary, I was there today and he had a few newer, clean west coast boats for sale. I'll work out a deal on delivery if you do it before it snows up there...
