Are there any other fees associated with this? When would you do the dunk test?

Dunk test is usually done the day before or two days before the race.

Props to you Steve all animal shelters are full to overflowing in this tough economy. You da man!

Is this for interactive participation, or just a ride? Is it during a race, or just open water? What days/times are available?

I just sold my Step-dad's 38' Scarab for him. He lives in Venice Beach, FL. I'm sure he would be interested regardless of the parameters, but it may help to add some details in your listing.
