To answer the question of how steps affect performance.. I have heard some improve up to 10 mph and increased fuel efficiency.

10mph is a lot. How many horsepower u need more to get that 10mph 150+...

I may be out on deep water, but try lock at an single step 35 Fountain. Would say A 312 Stinger vs. 35 Fountain comes from the same hull from start.... Excalibur 31/32. (A JC Simon design).

I had a 1989 312 Stinger, sold 2006.

But I could be wrong....

Fountain stepbottoms even the single ones If memory serves correct are FBdesigns.
