Your question is a tough one to address. It is too vague. Perhaps you can give some basis to help answer your question like...
1 Where do you want to boat (river, lakes, ocean)?
2 What size boat do you want?
3 What bottom design do you want or are interested in?
4 How fast do you want to go?
5 How much do you want to spend?
With these questions answered, you will get responses for how the given boat will handle!

this thread will go to chit in about 5 posts...

This should be deleted, do not categorize any boats in handling....they're like women, they all act differently, some you can ride hard and they love it, others hate it, faster you go, again, same thing...all will bite you in the ass and rob your wallet if you're not careful...but when you get it right...it's all worth it...

good one lmao, but I found out that full not add on hyd steering. makes a hugh different over 80 on my vees. good luck with the 30 this yr. we are trying a totally opposite prop (4 bow lifting} from what we tried last fall testing. other wise I am going to have to blue print the bottom. but it will be great if the new prop and maybe new gas tank up front will do. sux porpoising at any speed over 25..ps 2 tanks would help for the around LI race Art.

From what I have come to understand is that a boats handling characteristics change usually within every 10 mph increments.
for example, a 27 Ft V at 65 mph may seem completely sound and planted securely, but then at 75 the same boat may handle completely different and what you thought might happen will not.
There are certainly a lot of parameters that effect this, Trim, power, wave height, V bottom Vs Cat (with or without center pod)
But my question was to try to establish some basic guidelines.
(of course I know for insurance purposes all boats are limited to 49 mph lol )
IMO it's more trim/attitude of the boat than actual speed. To a certain extent obviously.

Example - same boats with different power. One boat has 330hp on has 500 hp. The 330hp boat trimmed out for max speed will feel more "hairy" at 60mph max speed than the 500hp boat cruising at 65mph with neutral trim.

Go get ya a 100+ mph 20' single outboard and learn to drive that. (preferably both a V-pad, then a tunnel)

Then get into a 75-80 mph 30' boat and it'll handle like a dream, probably even be boring...

LOL!!!
