Looking at buying 2 optima marine batteries for my stereo. Planning on 2 subs, 4 speakers in the cockpit and another couple down below.

Look up Deka Intimidator. Buy one of their AGM (absorbed glass mat) batteries.
I bought one for my car stereo and they're the best bang for your buck you can get. They're a step above Optima in many ways. Serious car audio guys swear by Deka. Deka is cheaper too.
They're designed for offroad racing use and extreme vibration situations and can take a lot of abuse. Just google "Deka Intimidator vs Optima" and read up.

It's funny you say that about the interstates, I was thinking about those from our local dealer, but have always have seen a lot of guys using optima blue tops in their boats on here. Guess I'll get a couple interstates, should 2 be enough or should I get 3 ( 2 stereo and one crank)

I use a pair of Blue Top 34M's for starting and D34M for the Stereo. The D denotes deep cycle and they aren't the best for starting but work great for anything else...
The main thing to remember is AGM batteries charge differently than wet cell batteries so if your going to charge them use a charger that you can switch between Standard and AGM types.
