With the flat surfaces you could get away with using thin real panels but even real thin they are very hard to cut and work with, of course they would outlast the boat. If you're just going for the look use one of the printed vinyls and it should be a breeze. Understand that it can tear or scratch but for the cost and ease, it is probably the best choice.
