Wow, 800 hp per side in a 33 PP? That thing must fly! My Formula 311 would plane on one 415 hp 502 if I was under 1/4 tank with 26 pitch props on. I would think a 25-27 would allow your engine to spin up to power and plane it off, maybe with a 4 blade for better grab. I would think as long as you were easy getting up it would not be too hard on the drive (800 has got to be pretty hard on them.) Taking the dead prop off would probably help too, if you are gonna be pulling props anyway. Your boat is similar in size to mine probably lighter, my boat will get up on one engine with the props I normally run on it, Bravo 26p, I have only done it twice for a short bit just to try it. Once I saw how hard one engine had to work to keep the boat moving on plane I decided in the event I had engine trouble I would rather idle. I don't remember the exact speed I was going but somewhere 25-30 mph, the boost was about 25 psi which I normally only see close to WOT (55mph), also the stress on the drive has to be huge and if you are already down to one engine why risk breaking the other one and being truly stuck.
Changing props out in open water is dangerous, I don't know how Tyson did it halfway to Bermuda! Better just to enjoy a relaxing cruise home.
