I have a few ideas as I have had issues with mine over the years:
1) did you "burp it" air can cause issues in the closed cooling.
2) related to above drill small holes in edge of thermos - lets air bleed out
3) triple check raw water flow ... thruhull, valve, impeller, oil coolers (if old check not clogged), and make sure all clamps are tight. I had a busted clamp - let in air - caused heating issues.

Too bad it's fuel injected.

Raising the timing at idle can significantly reduce exhaust temps unless it's already somewhere say between 16-20.

An important piece of missing information is that he isn’t using oil coolers of any kind. His issue is overheating after a hard wide open run when the oil temps would naturally be sky high without coolers. The temps don’t rise until returning to idle speed if I have his description right.
