You’re thinking of “The Cowboys” but there are actually 8 or 9. I’ll give you the tough one. In “The man who shot Liberty Valance” he is dead at the beginning and the whole movie is a flashback.
My favorite western has to be “Train Robbery", in case you all forgot John Wayne’s co-star ... a young Ann Margaret!

Are two of my favorites, although anything with "The Duke" will be excellent also.
Not exactly in the genre, but nonetheless very entertaining was Dustin Hoffman in "Little Big Man".
