Another option if you have the time is to run the "Okechoobee Waterway" from east to west coast. You have to go through five "locks" and halfway across is Roland Martins Marina, a good stopover point.

Make sure all locks are operating though. Once in a while one goes down for repairs and blocks the trip.

I did this back in 94 and it remains possibly my favorite boating experience.
