Default 454 operating temp with closed loop system

Hello,
I bought a 22' 1994 scarab with a 454/Bravo setup and just got her in the water for the 1st time today. Ran great but started to overheat. temp got up a hair over 200 and I docked. What is the temp I should be running on this engine?
Thanks for your help.

Mercruiser service manual said engines with thunderbolt lV ignition runs a 143 temp thermostat on the closed cooling system, And the thunderbolt V or fuel injection runs a 160 thermostat on the closed cooling system. And [FYI] some times the gauge will show 10-15 degrees higher then what ever thermostat is installed in your engine. And normaly the warning horn will go off at around 196-200+ degrees.
