Have been trying to diagnois issues on a 08 525EFI Single. Does anybody know why it says, port coolant temp 32F & starboard coolant temp 32F, and also lake sea temp 32F. The current lake temp is 75F and was wondering if someone could shed some light on these?

Because it doesn't have sensors to measure those, so they are at there default values. They do nothing on the 525 and are turned off in the cal.
