I want to coat or paint the dash inserts and glove box door. Thought about hydro dipping the parts, but its seems to be a bit of a waste, as I just want to go with a solid red. What are some other alternatives. Also, what is a good way to label the switches, they are currently labeled on the inserts, not the switches themselves.

Any automotive paint will work just fine if it is carbon fiber. You will need to prep them for adheision, scuff with a gray or red scotchbrite, most carbon fiber pieces are clearcoated so the prep is easy. Try not to breakthrew the clear to the matting as it could cause pin holes/lifting or soking in the areas that you breakthrew. If you want you could use a sealer but i dont think it is needed. Wet sanding the parts in 600gt wet would also be good, remove texture if there is any , then degrease and spray with a single stage auto paint or base coat-clear coat.
