Default valve size and rejetting

I was hoping someone could answer this. 2 winters ago I had 2 sets of 781's upgraded with 2.17 intake valves and 1.88 exhaust valves. At that time the carb which was setup by Nickerson had 78 primary 86 secondary jets with a 6.5 power valve. Unfortunately the person that did these heads never installed exhaust valve seats and after 40 hours the exhaust valves started to sink into the head. I caught it in time before and major blow-up. I got 2 more sets of heads, had the checked for cracks etc. The shop went smaller in valve sizes. Instead of 2.17 we went with 2.10 and exhaust from 1.88 to 1.80 this way we wouldn't cut the valves seats too close to the water jackets.
My question is: The engines run great except i'm seeing more fuel usage on cruising @ 3200 rpm's. Since I reduced the valve sizes would it help to reduce the primary jet size too 77 . Would the different in the valve sizes make a big difference and possibly burning on the rich side
Thanks for your help
