I try to remember to drill and tap everyone of them that comes in my shop. So obviously, I've done a ton of them. I have posted a pic on here before at some point. You can just come up about .200" from the bottom and drill away. It's actually pretty thick at the bottom.Works great.

My preference was for standard NPT pipe threads. I already have the taps and there are more options for plugs. Plus, the standard Merc plugs are a pain with the flat top screw; they inevitably strip out. I've replaced every one of them on my boat with these:
