Default Mercury 520, 540, 565 or....?

My old 496HO is at 550 hours and I have giving me a lot of trouble free boating, only a few sensor failures which was both easy and cheap to fix. However it’s time to move on to the next motor and I want to take a step up in power, still reliable, and wish for some input from the board which engine will give me most bang for the buck.
I have also been thinking about letting someone build me an LS-based all aluminum engine in the same power range but have got advice both for and against. Crazy or not?

Any good input is appreciated!

If factory Merc power is in your budget then don't bother considering anything else.
