its white smoke that smells like burnt oil. Pulled plugs and changed oil no water

I don’t understand (I am not a mechanic by any means) if something was wrong wouldn’t there some indication? The motor starts and idles perfect, doesn’t skip, good oil pressure, no abnormal noises???

Definitely run it without the valve cover to see where it is emitting from.

If you are going to run it without the valve covers get yourself a set of cheap stock stamped steel covers and cut the center out of them and install these. It will save you a ton of cleanup time and mess. Probably can get a set for a few bucks at the junk/pick-n-pull yard.
