Default 575 SCI Wiring

I know this has been done many times so I hope somebody will know the answer. I have a 575 SCI that I would like to put an aftermarket EFI system on.(that's the part that has been done many times) So.... my question is this. Can I or how much of the factory EFI wiring can I remove? ECU and harness. Looking closer the factory harness incorporates things like Alt,knock sensor, electric fuel pump relay, coil. Do I strip it all and rewire individual functions as I need them or do I leave it all intact and just tie it all up out of the way? That will look crappy so im wondering if anyone can share with me what they have done? Thanks

Eddie Young makes a kit to convert the 575 to his injection set up.

Yeah, I'd call Eddie before ripping into it.
