We did one for my eliminator cat. Had a complete seat made to fit snuggly between the front buckets, then fabricated a seat frame for it from aluminum 2 inch L angle stock. Fabricated matching brackets under the existing seats and bolt them together with 3 bolts per side. Not quick release by any means but I wanted to be sure my daughters seat was solid and safe. It takes about 3 or 4 minutes to install or remove. Having her right beside me eases any worries about running hard.

Sorry.no pics of it. If you can wait until winter goes away I'll send ya some. No seatbelts as I wouldn't want my kid strapped to an open boat incase something went wrong. I did install a couple of "chicken straps" for her to hold onto though. They are just long enough to meet handle to handle over her legs. She just puts the handles together, closes her hand around them and off we go. Whatever you do,don't let the kids sit up on their knees to see over the dash. Hard to stay there when you throttle back without doin a face plant. I had the seat made with a ton of foam under it so it acts like a booster seat.
