Default 502 water temp

The mechanic kept asking me what the H2O temp was. He was in the back trying to figure out which position of the intake shut-off valve was open and which was closed. I was at the helm reading the guages. The temp was around 190. He only checked the starboard engine.

Now, neither of the guages seems to register. There's a ton of water blowing out the back, so I know it's circulating. Sending unit wires seem to be hooked up right.

Engines seem to run like they're not warmed up real good. What's going on here?
