Water temp freeks out???

Recently fought this same problem. As stated here by others, I also could not believe the temp on the motor could change that fast, so I broke out the thermal gun.. Better believe it boys n girls, it can! The thermal shock on the engine must be incredible. Mine would do the 180 - 130 drop in about three seconds, not good...
Get a clear piece of hose, replace the hose from the sea strainer to the water pump first. Check for bubbles. If noe found, go from the pump to the engine with it.. Process elimination, you will find the air leak.. And yes, it will suck air on the pressure side of the pump thru a venturi effect, why do I know this??

Hum??? Thanks for the suggestion Scott B, I currently run reinforced clear hose to the strainer then to the Pump, but never looked to see or notice any bubbles. Except for the fact that the strainer never is really full, it just has a constant whirlpool that that gets smaller as the rpm's go up.
First I will swap pickups because it's easier, If the problem goes away, then I'll know it's from the thru transom/strainer/hose from strainer, or all three...

Well I did make up a tube that would fit over my existing thru transom Pickup. I brazed two 1/4x20 nuts to it, so I can have two bolts to tighten it to the existing tube. this will extend the pickup further under the hull. If the step is introducing air to the pickup, this should make it deep enough to try. Doesn't look like it's going to happen this weekend Rain for the 8th weekend in a row!!!!!

Got it!!!!
Opened the raw pump, and found an impeller with only 3 vains!!!
Put new impeller in.........and.........Same problem??????????
Took the water feed hoses that go from the merc "T" to the exhaust manifolds...... And there it was....huge junks of ruber impeller part......Cleaned them out....and Vroom Vroom!!! perfect water temps, perfect water pressure!!!
