What does it mean when my fuel pressure gauge is pegged? My port motor shows around 16 pounds. Is the gauge there to worry only about low fuel pressure that would lead to a lean detonate or what?

I really doubt you have 16 lbs of fuel pressure. That much would blow right by the needle/seats on a carbed 500hp.
I would lean toward a problem with the guage.
