Default Toe-in or Toe-out

I was hoping someone out there could help me work through what would be a good starting point on my V-bottom twin engine boat. I am currently turning the props in and have a toe-in of 1/4"(toe-in where the front bullets are 1/4" wider then the drive shafts.) Also if anyone can explain why you would toe-in or toe-out when you have your props turning in.
