Default Agreed value insurance?

So I have some questions that my agent wasn't sure about.
I'm redoing a 83 nova II.
After taking some rides in other boats (272 formula,33 scarab,265 Baja force) we like the hull we have for the rougher water we boat in on occasion. I'm repainting the hull inside and out,(stringers and transom are solid)rebuilding the drives, (Arneson #6s) building 383s out of the 355s,adding around $2500 in a/v equipment,redoing the gauges,dash and added $2000 worth of nav equipment. The trailer Tri axle trailer is also beaing refurbished with new paint,pins,bushings,brakes,hubs,bearings,wiring and lighting.

How do I go about covering this in the case of a total loss or theft?
