Default New to me heat...looking for advice

Hey there guys and gals....I'm new here and recently purchased a 97 heat(pre step) and I'm getting ready to start modding the motor and I'd like some advice and maybe guesses on what my new top speed may be??

Currently,,,,
97 heat of course closed bow
525sc merc with 530ish hours
Intercooler/chiller installed at 20 hours by Nordic due to overheating issues
Boat runs an honest 70-72 all day long, people/fuel doesn't matter...it ran 75 once on fumes with just me in it in some chop

Plans as of now....
Hone and rering the stock pistons along with new rod and main bearings
AFR heads from bob at marine kinectics
Roller cam, lifters, and rockers again from bob
GM 6-71 supercharger sending core to Dyer's blowers for rework and buying his drive kit, intake, pulleys, etc.
7-8 lbs of boost
Dual 750 carbs

Claims...
From things I've read and from what Bob says this will be an honest reliable 700 hp 93 octane motor....any truth to that??

Questions....
I'm undecided on the heads as of now...what would estimated power differences be if I went with my stock heads hand ported a little by me(I'm and mechanic/machinist) and a set of valve springs/keepers with stock cleaned up valves(assuming they're in good shape) vs the AFR heads??
Of course top speed estimates??
Fuel economy guesses as far as better/same/much worse than current engine while cruising??

Sorry for such a long first post everyone just trying to give as much info as I can so you guys can help the best you can

Thanks in advance!!

No expert here but that sound in range for that engine. You have to have it on a deno for proper tuning, that's where the power is and engine life will come from!
