I rode on that boat last time I was in Aruba. It's huge! Good luck on the rebuild!

Run a tank - misting system with chilled water and maybe seat back mounted flow valves when boat is moving,maybe a 3 section canvas snap on with collapsable side supports for low speed sightseeing?

Going to be on a '70 foot cat today ,with twin diesels btw , but ill bet its not nearly as fast as that one lol
