Anybody have any idea how much work it would be to retrofit this P50 war cry larry smith boat with more of a pleasure boat seating arrangement?

The big thing to be done would be moving the fuel tank and running saddle tanks Not that much glad work move the bulkhead back and shorten the engine hatches. You could more than likely build the back seat over the V drive transmissions that would give you even more cockpit space we did a 38 Larry Smith rave boat to a 5 man cockpit and staggered setup so a 30 with the side by side engines would be no problem.
