HP 500 overheating coming off plane

Every time I come off plane the temperature gage goes from 140 to just under 240.

I have tried different thermostats, replaced the impeller housing and impeller, completely flushed out the oil...

Found this boat for sale on Pop Yachts and trying to get info. Anyone know anything about it? Located in Bradford, Connecticut. Someone told me it has been sunk before.

i am looking at a 24' obsession with a new 454 engine. 165 total hrs. guy wants 13,000 for it. looks to be in good shape by the pics. he said it cruises at 38-40 mph at 2800 rpm ...
