Default Filling in transom notch - outboard

The transom on the little boat is notched for an outboard. With the heights the motor is set at the previous owner made to alum plates to mount the motor. I want to fill in the transom, what glass should I use over the transom? I was thinking 1708 bi-ax e-glass with West Epoxy but I really don't have a clue what would work best.
