Go down in your cabin and lift up the door on the step into the cabin. This is were the transducer goes. It is a shoot thru hull type of deal. This is located before the step as you will not get a reading after the step due to the airated water like you have already found out. Keep in mind you will not get a reading much above 30-35mph but it will work fine in a no wake zone. Also to mount the transducer make sure the indie of the hull is clean smooth and flat. Take the transducer in a zip lock bag of water with the boat in the water and move it around till you get a good reading. That is wear the glue the puck like transducer down.

A Fountain rep told me that it has to be mounted at least 12" off center, (center is cored). That would move mine into the round access hole that is inside my cabin step. When mounted in my engine compartment, it worked fine at rest. At idle, she quit registering.

US Fountain yep the correct place is under the cabin step to the right side if you are in the cabin looking out. That spot under the cabin step down is right infront of the step in the hull. There should be a flat place built into the inside hull bottom to glue down the transducer. Use the water in the bag method though so that way you can find the perfect place.
I do not think Fountain hulls below the water line are cored though.

RJ1340, from sitting in the boat facing forward the Starboard side is the driver side (on most boats) and the Port side is the passanger side.
Remember your the star in the boat thus starboard side.
Not trying to be a smartazz but didn't they cover this in your coastguard or Power Squaderon course?
