I back mine off every year. I pull all the pushrods to check them for straightness. Also, I check all the spring pressures. IMO, valve train is the most important part of your engine.

Even if the lifters were to bleed down a little... they will pump back up the first time oil gets to them. My concern about letting an engine sit for a long time is corrosion on the cylinder walls from moisture. A tablespoon of oil in each cylinder will take care of that problem for the length of one winter.
