Default Engine block temp

What is a normal engine block temp, my intake senso/temp gauger appears normal temp, as well as the headers, but the engine block temp on my 454 seems high after wot. Any help appreciated.

500 hp merc...one gauge (for intake) is a norskeg with numbers reading 160, the other is a quicksilver with no numbers, hits 3/4 to full...(so I dont know the #, im looking around to find the numbers. I recentlyy ran always cold, now using a smallest restrictor plate I can find...Engine feels fine to touch.
