Default oil thermostat, oil cooler problems (500EFI)

Anyone familiar with these systems? Detonated a motor and rebuilt it. Afterwards the oil would run very hot (280)!!!
Removed the oil thermostat and found a small piece of metal holding the thermostat in there that appeared to keep the oil from flowing to the cooler. Ordered a new thermostat but it looks a little different so we put the old one back in thinking the metal piece was the only problem. Motor doesn't run as hot, but still hotter than the other one. I've just removed and taken the cooler apart and found very little trash in it. The water temp has been about 130 so we're good there. I took the old thermostat out again and put both (old and new) thermostats in boiling water to see if they reacted the same. New one opens a little faster and farther then the old one but again only slightly. I'll have some pics soon of the thermostats and how they sit in the oil filter relocation bracket.

Thanks,

It's been 5 years since this happened....and I've sold the boat. I seem to remember after selling the boat I had the new housing and the old thermostat to get rid of. I'm thinking that piece from when the motor blew was the problem but can't be sure now.

oops....oil thermostate is in the remote filter plate on the bottom right hand side of the block.......where the oil filter would screw into the block on a truck motor.
