Not sure, but maybe this spreadsheet will help what you're trying to do. I am looking at swapping over to a full hydraulic as well and wanted to figure some system parameters.
The spreadsheet makes some gross assumptions but in a single plane, the math should work. I could do a lot better in ProE.

The one you are looking at in th swap shop has 2 cylinders so it would be 8 turns lock to lock.
I am running a hynautic system on my boat right now and it is 8 turns. I don't mind it but I have twins so I can turn by using forward and reverse. On a single that would be a pain in the a$$.
I guess if you just used a single cylinder it would be ok.

The K5s are unbalanced. The volume of the rod takes up some volume on one side. So that number wont be exact.
As was ponited out, 2 cylinder would be about 2X the volume, but it would be a balanced etup, so at least turns to lock would be the same in both directions.
