We have a fully inclosed, insulated boathouse with overhead doors and vinyl from bottem of doors to waterline. Due to cost, I do not want to heat through the winter. I am already finding mold growing inside the dock and everything is wet. So do I?

Place a dehumidifier? Dock is approx 24 x 30 - do I oversize considering I have two open slips? Am I fighting a losing battle with two open boat slips and using a dehumidifier?

Or do I Just open the dock and let it air flow? I think this will work or help but i do have security concerns.

Suggestion?

I would try to add some forced ventilation. Then you can keep it locked up and still air it out. I don't think the dehumidifier will ever win the battle.

the dehumidifier will never win the battle ,better open up the ridge cap and a few vents so it can breath ... look around on here and check out Bill Ps

Get a fan to circulate the air and leave a light on..

Mold grows best in damp, stagnate, dark places...

exactly, keep a door open and if possible, a forced exhaust fan to keep the air moving with new fresh air.

The bottom of the house is open to water? Unless you can stop the source of the humidity you can't control it. You need to circulate air outside the boat house thru the boat house. This will drop the humidity in the house as long as the outside air is less humid that the inside air.

Try removing the vinyl you have on bottom of door to water line and vent at opposite end of boat house so air can move. Maybe enough to kept humidity down

A couple ceiling fans would probably do the trick. Just need to circulate the air.
