I have try to run with no thermostat (with hole restrictor) on cross over setup and the engine can not warming up in my casse i run in 65-70 f water temp. i have notice also with no thermostat my oil presure stay hight like when i start the engine when it is cool.My engine have the stock oil thermostat and the oil seem to stay too cold without water thermostat. I prefer to run at 150f and 160f after hard run. I have drill 4 x 3/16 hole in my thermostat and i will probably drill one more. Start with 3 x 3/16 hole and see what the gauge say.
You will need also a bypass hose between the cross over and the th housing to get enough water in exhaust when the th is close. The bypass is the reason that you need to drill hole in (stock merc) thermostat because the thermostat is afected by the cold water coming in front of them.

Hope that's help.
