New to us Talon 25 with 80's question

The Mayfair steering is so tight it takes 2 hands to turn it, even when out of the water. Has a squeek sound at the helm. We disconnected rams from wing plates and engines rotate freely. The helm says Teleflex, rams say Mayfair. One of the websites troubleshooting list says air will cause it, but there's no slop.
Throttles won't stay put. Left engine is worse. They're twin handle throttle and twin handle reverse. Is it a bad idea to take return springs off powerheads and let the control push the butterflies closed?
Any advice is greatly appreciated.
