Removing hook in Corsa hull

I recently purchased a 1984 Corsa 26' and have noticed there is quite a bit of hook in the hull..
Don't know if it was manufactured that way or from being on a roller trailer the first 14 years of it's life.
While cruising about 30 or so, it starts to list to the Starboard side and gets worse as speed increases unless I drag a tab.
Measuring 2 feet back using a 4 foot strait edge on both the inner and outer strakes, there is about 3/8" on the port side and 1/4" on the starboard. Measuring on the hull it's less and minimizes as I get closer to the keel.
Being a "narrow beam" hull, does any of this need to be there or am I better off filling to take all of it out?

The few narrow beam boats I've been in (24x7s, 27 Avanti, XLT-185) all listed starboard. My 24x7 with a bracket is better/worse with different props, and the list evens out completely by 40-45. I either use the "courtesy switch" (tabs), or put the odd numbered skank on the port side. I'm speculating here, but if you take out that hook, you MAY end up with a porpoising issue. Does it still list at WOT?

Yes to both options. Several small skanks during daylight hours, one large odd skank after sunset. The large odd ones put more effort into it, because they have to!

According to all the guys above, Your boat mods needed are just certain type of skanks.
If you feel the need to add some bolt on mods, just get a skank with bolt ons.

.... well, I tried. but the wife said NO to the skank weight distribution system... 
The list does seem to get better over 40 mph, however, the bow of the boat goes down at that point and rides almost dead level..
Trimming the drive will bring the bow up a little bit until the prop blows out.
The boat tops out at 50 mph as it has a 1.95:1 gear ratio Volvo 290 drive with a big 'ol 23 pitch ship propeller on it. LOL
It's getting a new transom with a Bravo set at 18.5" X dimension. K planes, and hydraulic steering.
If it DID porpoise after removing the hook, could I stop it with a little bit of trim tab?

Usually you can stop porpoising by dropping tab or trimming the drive in, but drive(s) and tabs down scrub speed. If you're doing a new transom, that might be the time to blueprint if you are going to do it... then again, the Bravo swap alone will probably change the boat's manners, if not the listing under power.
If it were mine, I'd wait on the blueprint until after the transom/Bravo change, then get your baseline to compare to similar boats and decide if you like the handling.
What's you current RPM at WOT, and what hp?
