Default Interior paint / gel coat - Cafe Racer

I was considering "Converting" my dash/door from the original black to white this winter. has anyone done this? if so, can you walk me through the process you took?

If I decide to keep it black,and want to restore it to look new (get ride of scratches, polish it up, etc), what have you guys found is the best method and products to do this?

i think plenty of people have painted theirs white, & other colors, from black. when we touched mine up we just prepped it & shot it.

So much nicer not having a giant 200 degree stove top for a dash/door in august. looks better too
