6V-71 Recomendations

Picked up a 6V-71 which is a shorter 4 chamber, straight housing, dual helix rotor 6-71. The body is 12" (not including end plates) compared to a standard 6-71 which is 15" main body. Based on the research I've done and the stamping that's on it, it's a 358C.I.
I have most of it figured out but the carb(s). It'll have two intake cathedrals, approx 4.375" by 3..875 ( I can machine it it out a little if need be). The problem I see is the openings for the carbs are only 1" apart in the center. So if I need to run 2 carbs I'll have to fab up a dual riser that V's out to get enough clearance to mount 2 carbs side saddle. I'm assuminga1" of clearance is not enoughe to run 2 750's side saddle? If I go with one carb, I can buy a single carb adapter plate with riser and be done with it.
So the big question, on my 525SC, with EQ320 or Brodix DS 320 heads, and a roller, running this 358C.I. 6-71 do I need to run 2 carbs or 1? And what size carbs would you recommend I look at?

Called dyers Friday, they said they "only service and rebuild blowers and that they sell no parts" despite having parts listed on eBay and their website having pictures of custom cases, end caps, etc
I'm really sure I do not want to deal with a company/people that have no idea what they do or do not do!
