Adding Shore power....maybe?

Need some help....I have a 2000 Baja 29 Outlaw. I would like to add shore power, but I'm not sure if I need full blown shore power.
I plan on running a small microwave and maybe hairdryer for the wife (not at the same time)
I currently just have a dual bank charger with an extension cord to charge the batteries.
I was thinking of installing the Xantrex HF 1800 inverter/charger and remove the dual bank I have already.
My thoughts would be to wire: shore power plug to the inverter/charger. It has an automatic pass through so it will be like shore power when hooked up and charge the batteries.
Everything that I read sound like I wont need a panel, the unit itself will be it. I plan on installed under the rear seat and running marine grade wiring to 2 outlets in the cabin.
Does this sound feasible? Any other suggestions?

That inverter/charger would probably work pretty good for a microwave or hair dryer. I am adding a through hull outlet and dual bank charger to mine to help keep batteries charged at home. it won't have the inverter function. There should be no problems with you running wire and outlets from it, or you could just run an extension cord to it. Just route it through the boat nicely.
