OK Guys I Need Oil Temp Help

I have a 540 NA 650HP Engine that is cooled throught a big oil cooler which also runs my power steering through the cooler as well.
The oil temp runs real cold like(160-190's) until I get up to about 80MPH or 5000 RPM range.
Oil temp will jump to 260 in a hurry, Then I have to chill back down to 3-4K rpm range to let it cool. What do you guys think the reason is for the oil temp jump, Is my standard bravo 1 water pick up not picking up enough water to cool at high speeds.
Others I have talked to say there 540's run the same, some say they run about 230 at WOT. I frustrated, what do you guys suggest. Add another cooler maybe?

I have HP500 style on my 540's that mount sideways above the bell housing. These are larger than the combo. units and then I have a separate ps cooler along side the oil pan I rarely see 200*
