Are the T-stat housings the later model type that have only two hoses going to the manifolds, or are they the earlier style that had 4 hoses - 2 to the risers and 2 to the manifolds? Got any pictures of them?

The sending units are what the gauge reads. When you get your new gauges the sending units are usually included. The reason for this is that a gauge reads a resistance output from the sending unit. You have to match a gauge to the right resistance/sending unit. Each manufacture may use different rated senders so if you use one gauge from one company and a sender from another, the gauge will not read the right signal so you may see 100 degrees temp when you really just melted your engine at 280 degrees.
