I got a TIG welder at home and have done quite a few car/truck stainless headers. I have always wanted to try a boat exhaust but fear the risk of water leaks, and the complications of fitting the outside tubes for water jacketing. I'm somewhat keeping my eye out for a set of off the shelf LS headers that are spaced out far enough to add tube for water jacketing

Don't forget about the learning curve of TIG welding stainless. I would also guess they are purging the tube with argon while welding, which also adds a big expense.
