Been shopping for one, fully loaded, including towing package, rear seat entertainment, navigation, etc. Any ideas what is the appropriate discount off MSRP would be appreciated! Thanks.

Should be able to swing invoice minus whatever rebate is currently being offered, which I believe is $4000 right now. That would be a more than fair deal.
You can try one further and go after some of the dealer's holdback, which for GM is 3% of the MSRP. On a $56,xxx vehicle that would be like another $1600-1700.
Good luck.
