Here is a couple of pictures of the template I made to set the bunk locations on the Loadmaster when we refurbished it. Baja has a simple hull design with a constant Vee angle from the transom (deadrise) to a point about halfway up the boat, or maybe a little more toward the bow. What they called their 'true vee" hull very similar to the Bertram Moppie that really pioneered the deep vee design concept. Which is a long winded way of saying that it is easy to set a trailer up for this hull.
As I mentioned earlier if you are only after help in guiding the boat on the trailer and not full hull support to the transom then just some guide bunks down at the keel and toward the bow are probably all you need. I would think that 8 feet would be plenty. You would not need to build a template if you did this and the guide bunks did not overlap you main support bunks.
If you have the main bunks like you like them, then another way to adjust the keel bunks would be to mount them low, then use the adjustable brackets and jack the brackets and bunks up to the hull until you get solid contact and then tighten everything down.
