Unfortunately I don't have 16" tires on my trailer and I don't know of any e rated truck tires in the 14" size. What is the best tire for us guys with 14" tires?

Use the tire calculator here to get an idea of what you can fit:

Modifying fenders to fit larger tires isn't usually a big deal on boat trailers as long as the fenders do not come close to interfering with the hull.

Thanks Sydways! I saved the links for future reference as well!
Maxxis as well, but stepping up to 15" rims would also be a wise move for you as well.

Very close, the first two numbers are the week, that the tires were built. The second two are the year. These will be the last 4 digits of the DOT code. If there are only three digits the first two digits are still the week, the last digit indicates the year in the 90's. Yes believe it or not we still see a lot of tires from the 90's on trailers, trucks, cars you name it.
Example 1514 would be the 15th week of 2014.
349 would be the 34th week of 1999.
Side note some years there are 53 weeks don't let that throw you for loop.
