Check with Pat over at Active Thunder and see who he uses. He's had several made for boats in the past few years that are good at speed.
You definitely want all stainless tubing, and through bolts, not screwed into the fiberglass.

I had a stainless Bimini made for my last boat and it secured to a very sturdy stainless arch. I could run up to top speed (high 60's) and she held tight but I'd say it was on the limit. 40-50 cruise was pretty comfortable.
I think an aluminum one would have simply folded up, with the Sunbrella working a bit like a sail, they take a real beating over about 40 mph. Go stainless.
Boating in the shade is just as much fun as boating in the sun!
